Job Role...
At Soho House a Pastry Chef is responsible for planning, organising and managing areas of profit, stock, wastage, hygiene practices and training within the Pastry Ktichen.
As the Pastry Chef, your duties will include recruiting and training new employees, adhering to allergy procedure and food preferences as well as working with the Head Chef or Executive Chef on developing new menu options.
Working alongside the Head Chef or Executive Chef, you will be the driving force behind the dessert offerings ensuring its seasonal, relevant and appealing to our members and guests. You will have an in-depth health and safety knowledge ensuring that standards are kept in line with HACCP.
Main Duties...
Technical
- To plan and direct food preparation across Pastry Kitchen.
- To review staffing levels to ensure that the member experience, operational needs and financial objectives are met.
- To lead on menu development for desserts and maintaining updated and accurate costings of all dishes prepared and sold in the F&B operation.
- To ensure compliance with food handling and sanitation standards and maintaining 5* food hygiene rating.
- To ensure all equipment in the Kitchen is properly maintained and in working order.
Leadership
- To train, develops and motivate team to meet and exceed food preparation standards
- To ensure there are regular menu tastings with the service team.
- To teach preparation according to defined standards and takes a pro-active approach to constantly improving the pastry offering and ensuring food safety standards
- To display exceptional leadership by providing a positive working environment, demonstrating a dedicated and professional approach to management, with a focus on team retention and development
- To provide direction for all day to day Kitchen operations
- To provide guidance and direction to the team, including setting standards, performance goals and monitoring performance
- To promote and encourage chef participation in Cook House and relevant Learning & Development initiatives
- To ensure all line chefs complete the relevant Food Safety qualifications in line with local regulations.
- To attend or conduct trainings
- To carry out any other reasonable request as directed by the Head Chef or Executive Chef
Experience Required..
A successful Pastry Chef for Soho House must have previous experience in a busy high-profile kitchen and a natural flair for first class service in a similar role. You’ll be reliable, friendly and happy to be a key part of the team that strives for success.
- Experience managing P&L, labour, purchasing, vendors and quality control.
- Strong attention to details
- Excellent customer service
- Fluent in English & Japanese
- Organised and reliable
- Ability to work and maximize relationships within a diverse team
- Food Safety qualifications
Physical Requirements:
- Must be able to seize, grasp, turn and hold objects by hand
- Able to work on your feet for at least 8 hours
- Occasionally kneel, bend, crouch and climb as required
